Taste and origin

Linden honey is made when our bees visit the flowering linden (lime) trees of the region in early summer. Depending on the year, nectar from other summer flowers mixes in — every harvest tastes a little different.

Its scent is fresh and slightly reminiscent of menthol; the taste is full, with a pleasantly spicy, sometimes slightly bitter finish.

Crystallisation

Linden honey usually crystallises within a few months and becomes finely creamy to firm. This changes neither its taste nor its quality.

Use and storage

It is best known in tea — add it once the tea has cooled a little, so the aroma is preserved. It also goes well with cream cheese, yoghurt and white bread.

Keep honey tightly closed, dry and at room temperature, ideally out of the light. If it has set, a warm water bath makes it liquid again — do not heat it above 40 °C, so the aroma is preserved.
