Taste and origin

Forest honey is made mostly not from flower nectar but from honeydew: the bees collect the sweet secretions of sap-sucking insects on the oaks and firs in the woods around our apiary.

It is less sweet than blossom honey and tastes strong, spicy and malty, with a slightly bitter note. Honeydew honeys usually contain more minerals than blossom honeys.

Crystallisation

Forest honey stays liquid and thick for a long time and crystallises only slowly.

Use and storage

Try it with cheese, on dark bread, in marinades and sauces for game, or in muesli. In tea it adds a strong note.

Keep honey tightly closed, dry and at room temperature, ideally out of the light. If it has set, a warm water bath makes it liquid again — do not heat it above 40 °C, so the aroma is preserved.
