Taste and origin

Acacia honey comes from the nectar of the black locust tree (false acacia), which in Bulgaria usually blooms in May. The bloom lasts only a few days — if it falls in a rainy week, the harvest is small.

It tastes gentle and floral, with a soft vanilla note and no bitterness. That is why children like it, and so do people who rarely eat honey.

Crystallisation

Acacia honey contains a lot of fructose and little glucose, so it often stays liquid for a year or longer. If it does set, that is a natural process, not a flaw.

Use and storage

It sweetens tea, yoghurt, muesli and desserts without changing their taste, and works well in baking and salad dressings.

Keep honey tightly closed, dry and at room temperature, ideally out of the light. If it has set, a warm water bath makes it liquid again — do not heat it above 40 °C, so the aroma is preserved.
